Raw honey by definition is "honey as it exists in the beehive or as obtained by extraction, settling, or straining without adding heat." (honey.com/images/files/Honey-Definitions.pdf)
When we extract our honey, we settle filter it to allow all of the debris (beeswax & bee parts) from extracting, to rise to the top which allows us to skim off the debris prior to bottling. Over a short period of time the honey will naturally begin to crystallize which gives the honey a "white" or "solid" appearance. The crystallization of honey will occur because honey has a large sugar vs water content. Once the honey crystallizes, we bottle and sell it.

Pure Honey
Our pure honey is made by taking the raw honey and heating it to 115 degrees which is just enough heat to re-liquify the honey. We then run the honey through a micro-filter and bottle for selling.
